Brownie Cookies with Chocolate Chips & Marshmallows

A Smallish Adventures holiday bake

We watch a lot of cooking and baking shows on TV and YouTube, and my husband is always bookmarking recipes he thinks look good. Isaac loves watching too. One evening, while we were watching a video about making the best brownies, he announced that he wanted to make a brownie cookie. Not just any brownie cookie, but one with chocolate chips and marshmallows. And then he decided these were the cookies we should make for Santa.

I thought it was a great idea. Santa probably gets tired of sugar cookies and plain chocolate chip cookies every year. These would definitely stand out. Who knows, they might even tip the scales on the Naughty or Nice list a little more in his favor. So we pulled out the bowls, gathered ingredients, and did a little experimenting to bring his idea to life. What came out of the oven was something cozy, very messy, and completely perfect: thick brownie-style cookies with melty chocolate chips and toasted marshmallow pockets.

They’re somewhere between a cookie and a brownie.
And exactly what we’ll be leaving out on Christmas Eve this year.

Brownie Cookies with Chocolate Chips & Marshmallows

Soft, fudgy brownie-style cookies with melty chocolate chips and gooey marshmallow pockets.

Makes: about 16 cookies
Bake time: 9–11 minutes

Ingredients

Dry ingredients

  • 1 cup all-purpose flour

  • ½ cup unsweetened cocoa powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

Wet ingredients

  • ½ cup (1 stick) butter, melted and slightly cooled

  • ¾ cup brown sugar

  • ¼ cup granulated sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

Mix-ins

  • 1 cup chocolate chips

  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven
    Preheat oven to 350°F. Line a baking sheet with parchment paper.

  2. Mix the dry ingredients
    In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

  3. Mix the wet ingredients
    In a large bowl, whisk the melted butter, brown sugar, and granulated sugar until glossy. Add the egg and vanilla and whisk until smooth.

  4. Combine
    Add the dry ingredients to the wet ingredients and stir just until combined. The dough will be thick, like brownie batter.

  5. Add the mix-ins
    Fold in the chocolate chips and mini marshmallows.

  6. Scoop
    Scoop dough into 2-tablespoon-sized mounds and place on the baking sheet, leaving space between cookies. Press a few extra marshmallows onto the tops if you like.

  7. Bake
    Bake for 9–11 minutes. The edges should look set, but the centers will still be soft.

  8. Cool
    Let cookies cool on the baking sheet for 10 minutes before moving. The marshmallows will be very gooey at first and set slightly as they cool.

Notes & Tips

  • These cookies are meant to be soft and fudgy, not crisp.

  • For extra gooey centers, err on the side of underbaking by about a minute.

  • Letting them cool on the baking sheet helps them hold together.

A Smallish Moment

Baking these wasn’t about getting a perfect recipe on the first try.
It was about listening to an idea, trying it together, and seeing what happened.

Sometimes the best things come from saying,
“Okay, let’s try.”

Especially when Santa is involved.
